A vegan pop-up restaurant will have a brick-and-mortar home on Milwaukee’s East Side. Celesta, operated by Beatrix Foods chef-owner Melanie Manuel, will open in the former location of Jow Nai Fouquet, 1978 N. Farwell Ave. According to a still-active Kickstarter campaign, Celesta will “bring both healthy and indulgent vegan dishes to Milwaukee in a welcoming environment. Our dishes are flavor-forward and inspired by both local ingredients and international flavors.”

In a Licenses Committee hearing Tuesday morning, official approval was given for Celesta. In addition to its plant-based menu, the restaurant will feature a full bar, specialty cocktails, and bar snacks. It will also feature a takeout counter and a vegan “butchery.” Manuel plans to open for business on May 24. Celesta will be open six days a week for breakfast, lunch, and dinner, plus brunch on the weekends.

Also at Tuesday’s hearing, approval was given to the Downer Avenue Stone Creek Coffee. In addition to Stone Creek’s regular fare, the new East Side location, 2650 N. Downer Ave., will feature an all-day breakfast menu, and a small offering of beer and wine. Stone Creek Downer opens for business May 25.
