THE ARGO INTRODUCES A REFRESHED MENU LED BY CHEFS BAILEY TROYER AND ISAAC BAHN

Refreshed menu launches September 9, bringing new flavors and influences to The Argo’s approachable gastropub menu

Milwaukee, Wis. The Argo will launch a refreshed restaurant menu on Wednesday, September 9, led by Bailey Troyer and Isaac Bahn, two chefs who have helped shape The Argo’s food program since opening.

While The Argo has quickly become known throughout Milwaukee for live music and entertainment, the restaurant has been part of the vision from the beginning. Now, The Argo is putting a renewed focus on becoming a neighborhood destination for dinner and drinks whether or not there’s a show that night.

“Bailey and Isaac have been in our kitchen helping build what we’re doing from the beginning,” said The Argo co-founder Adam Powers. “This menu gives them the opportunity to put more of themselves on the plate and show people what The Argo restaurant can be.”


Troyer and Bahn lead The Argo’s culinary program, bringing different backgrounds and influences together in a collaborative, chef-driven kitchen.

Troyer has been cooking The Argo’s food since opening day and helped develop and execute the restaurant’s original menu. Originally from Indiana, her career has taken her from culinary school and Cerulean in Indianapolis to Boka in Chicago and several Indiana kitchens before moving to Milwaukee and joining The Argo.

Bahn, The Argo’s Chef de Cuisine, brings experience from acclaimed Chicago restaurants and a culinary philosophy rooted in family, culture and community. A Kendall College graduate, his career has included HaiSous, Avec and Obélix in Chicago before moving to Milwaukee and working at Birch.

Together, they’re developing an approachable gastropub-style menu that introduces more of their personalities and influences while still feeling at home in a neighborhood restaurant.

The first look at the new menu includes cheddar-scallion focaccia, a K-Town Philly, galbi-marinated steak frites, and kimchi carbonara, alongside Argo favorites including its classic burger and Friday Fish Fry.

Bahn’s Korean heritage plays a role throughout the menu without defining it. The cheddar-scallion focaccia, for example, combines Wisconsin cheddar with flavors inspired by the scallion pancakes he grew up eating.

“We’ve learned a tremendous amount since opening,” Powers said. “This next chapter is about giving Bailey and Isaac room to be creative while making The Argo a place the North Shore thinks about for dinner, not just when they’re coming to a concert.”

Leading up to the September 9 launch, The Argo will introduce Troyer and Bahn through chef interviews, behind-the-scenes stories and previews of dishes from the new menu.

The new menu launches Wednesday, September 9 at The Argo Restaurant & Lounge. No concert ticket is required to dine at The Argo.
