The COVID-19 crisis has done incalculable damage to the restaurant industry in Milwaukee (and pretty much everywhere else). Since mid-March, food purveyors have struggled to stay afloat and have been forced to think of innovative ways to keep serving customers and keep the lights on. Within a few days of the shutdown back in March, Crafty Cow in Bay View wasted little time adapting by adding three new virtual pop-up restaurants. A couple months later, they expanded carryout service to brunch items with the creation of a “Biscuit Boys” menu.

Today, more than six months since the still-raging pandemic first made its presence known in Wisconsin, Crafty Cow in Bay View announced two new “ghost kitchen” concepts that will specialize in delivery-only items. The concepts—a Mexican/Asian/American fusion theme known as “Fiesta Panda” and “Big Wings,” which will specialize in chicken wings—can be ordered on a variety of delivery apps starting Friday, October 9. Milwaukee, WI: Crafty Cow today announced Fiesta Panda and Big Wings, two new ghost kitchens. What’s a ghost kitchen? A ghost kitchen is a delivery-only food concept that’s sold exclusively online and through delivery apps. So, customers will be able to enjoy these exclusive menu options through carry-out and delivery but they will not be available for dine-in.

“We’re always excited to launch something new that allows our staff to get creative and push their limits a bit. These ghost kitchens will allow us to reach a wider customer base while also providing additional dining options for the Milwaukee community.” says Devin Eichler, Owner. “Along with launching these ghost kitchen concepts we’re also expanding our delivery area by adding 2 additional online delivery partners to our roster.”

Fiesta Panda Menu: (Mexican, Asian, and American Fusion Food)
• Birria Ramen – Birria, ramen, house birria broth, egg, red onion, cilantro, avocado, corn, lime
• Nashville Hot Ramen – Nashville hot chicken, ramen, house chicken broth, egg, corn, scallions, soy glazed mushroom
• Pozole Verde Ramen – Chicken, ramen, house pozole verde broth, hominy, egg, cilantro, onion, charred jalapeno, lime

• Sambal Cauliflower Tacos – Aleppo Pepper Battered cauliflower, sambal, mint, avocado, organic greens
• Gochujang Fried Chicken Sandwich – Ramen slaw, kimchi, sambal aioli
• Birria Burger – double smash burger, pepper jack, birria, onion, cilantro aioli, cotija, consume
• Vietnameese Brussels – Brussel petals tossed in a sweet chili sauce
