Yummy Bones to Open at Crossroads Collective Food Hall
MILWAUKEE: AUGUST 1, 2024 – Yummy Bones, the popular Port Washington barbecue joint, is scheduled to open on August 19th at Crossroads Collective, bringing rave-worthy barbecue back to the East Side.
Pitmaster Robert Meredith has owned and operated the Yummy Bones brick-and-mortar restaurant in downtown Port Washington for more than 10 years and is eagerly working toward opening a new location on Milwaukee’s East Side.
Meredith brings the flavors of the deep south to Milwaukee, fusing his family’s Mississippi heritage with his Wisconsin upbringing. “I learned to cook from my grandmother,” he relates. “She was an exceptional cook and taught me that food is a way to bring people together and share love, culture and tradition.” Love is at the heart of Yummy Bones, and each bite transports guests to a warm family backyard barbecue. Family recipes are also on the table, with signature preparations and secret techniques passed down through generations of Meredith’s family.
Meredith started Yummy Bones as a small operation, but word spread quickly as guests brought friends to the experience the mouthwatering aromas and flavors and booked Yummy Bones to cater weddings and family events. A unique proprietary spice blend and carefully selected woods for smoking create a bold flavor that keeps guests coming back for more.
“It brings me so much joy to watch people connect over a good meal,” comments Meredith. “I knew I wanted to become a chef as a kid helping my grandmother in the kitchen. My passion was ignited creating delicious meals for my family, and being able to expand the restaurant now feels like the family is just getting bigger.”
The new Crossroads Collective location will serve up classic, authentic Southern barbecue including ribs, chicken, brisket, wings, pork, wraps, and sandwiches along with sides like potato salad, slaw, mashed potatoes, cowboy caviar, mac & cheese, baked beans, and more.
“Barbecue is back at Crossroads and we couldn’t be more excited,” remarks Emily Chirillo, New Land Enterprises’ Hospitality Director. “Robert’s warmth, hospitality and passion for community make him such a natural fit for Crossroads Collective, and we know the East Side is going to go crazy for the quality, authentic dishes at Yummy Bones.”
Yummy Bones is scheduled to open in the stall that is currently home to Ready to Roll. The artisan egg roll concept opened in November 2023 and extended its initial pop-up engagement earlier this year.
“Our winter residency at Crossroads Collective that stretched into the summer was an unforgettable adventure.” Comments Shatoia Robinson, owner of Ready to Roll. “We loved every moment of serving our fantastic customers and sharing our passion for food. The experience was more than just business—it was about building a vibrant community and creating heartfelt connections. We’re incredibly grateful for the friendships and support we gained along the way. Working with New Land Hospitality was truly exceptional. Their support and expertise created a collaborative atmosphere that enhanced our experience, helping us elevate our culinary concepts and navigate the complexities of the food industry with confidence and creativity.”
Yummy Bones is scheduled to open on Monday, August 19th , and like other Crossroads Collective vendors will offer dine-in, carry out, delivery, and catering orders. Online ordering is available at CrossroadsCollectiveMKE.com.
