Dairyland to exit 3rd Street Market Hall to make way for Bebe Zito, a Midwest-based burger, chicken, and ice cream concept

Milwaukee, WI – Tuesday, June 3, 2025 – Exciting changes are coming to 3rd St. Market Hall as Dairyland and sister concept Mid-Way Bakery exit the food hall, allowing for the national award-winning Minneapolis brand Bebe Zito to usher in their popular lineup of burger, chicken sandwich and homemade ice-cream offerings. The Milwaukee location will be the fifth unit from co-owners Ben Spangler and Gabriella Grant.

“We’d like to thank the Dairyland team for being a part of our journey at 3rd St. Market Hall,” said Omar Shaikh, partner at 3rd St. Market Hall. He added, “Dairyland and Mid-Way were two of our anchor tenants when we opened and we’re thankful they shared their talent and delicious food with all of us. We wish them the best.”

Both Ben and Gabriella are familiar with Milwaukee and Wisconsin. Gabriella, an alum of MIAD fell in love with the city during her time as a student; so much so, she lived and worked as a designer in Milwaukee for years after earning her degree. While both as a student and young professional, Gabriella enjoyed living, working, and playing in many of Milwaukee’s vibrant neighborhoods, citing these experiences as diverse and welcoming. Ben too has experienced Wisconsin professionally as a chef in the far Western part of the state where he focused on curating true farm to table dining experiences for guests.

“I am so excited to come back to Milwaukee,” said Gabriella. She added, “I learned so much about myself in this city…and the idea of returning there just feels right. The food and beverage scene is growing, the downtown and surrounding areas are diverse and vibrant, it feels alive during the day and night—we’re excited to be a part of that!”

Ben and Gabriella are no strangers to the food hall experience. Their Malcolm Yards Market location was the second of the group’s growth and the third location was inside another food hall, East Street Crossing. Each location in the portfolio is slightly adjusted to accommodate the space(s) and communities in which they occupy and serve. The 3rd St. Market Hall venture will be a comprehensive Bebe Zito experience that includes the most popular and sought after items from both the hot and cold menus.

Bebe Zito is a small batch ice cream company that hand crafts its products. Their ice cream bases are made with high quality ingredients, with mix-ins that allow the guest to create their own ice cream masterpiece. Favorite flavors from the Bebe Zito scoop shop include the as seen on the Food Network and voted a “Perfect 10” by John Harrison (inventor of Cookies & Cream ice cream), Tres Leches Strawberry Snickerdoodle (It’s a rich base made from three milks – cow’s milk, condensed milk and goat’s milk with a strawberry snickerdoodle cookie mix in), Marvelous Mrs. Hazel (DF)(V) was recognized as the third best non-dairy ice cream in the country at ConeCon (A chocolate hazelnut base with healthy sized chocolate cookie dough chunks.) Animal Frosting (A sweet cream base that tastes like sugar cookies, bits of the Mother’s pink animal cookies, handmade pillows of frosting ganache and rainbow sprinkles, finished with additional sprinkles and a full animal cookie on top).

Their hot menu offerings will include the Bebe Burger (a beef and bacon patty, American cheese, special sauce, Grandma Connie’s pickles, and lettuce.) Cheese Curds (beer battered white cheddar cheese curds served as a square), Honey Butter Chicken Sammy (a buttermilk fried chicken thigh, honey butter special sauce, Grandma Connie’s pickles and lettuce served on a potato bun), Honey Butter Chicken Tendies, (two tenders in honey butter sauce, a side of fries, coleslaw, special sauce, toasted bun), and more comfort food favorites.

While the Bebe Zito team continues to work on their rollout at 3rd St. Market Hall, they’ll be hosting sneak peek tasting events featuring their favorite ice cream flavors as well as bites from the food menu as they introduce Milwaukeeans to their brand.
